Jalapeño-Cheddar Dipping Toasties

  • 2 slices bread
  • 3 slices white cheddar
  • 2 slices red leicester
  • 2-3 pickled jalapeños, diced
  • softened butter
Place cheese on one slice of bread, alternating flavours. Sprinkle over jalapeños. Using a fork, dip it in the spicy pickle juice and shake it over top of the cheese for additional flavour. Place second slice of bread on top. Butter both sides of bread and then cook in a skillet set over medium heat until golden brown. Carefully flip over and continue to cook until other side is golden and cheese is melted. Let cool slightly and then cut into sticks to dunk and serve.
